Velvet in Spray! These sprays make it possible to give a velvet effect on your frozen desserts or entrements. Draw using a stencil. Immerse ¾ of the can in water at 50°C (122°F) for 30 minutes or in a steam room at 50°C (122°F) for 6 hours. Shake the can well for 2 minutes (the metal ball in the can should be heard). Spray at a distance of 30 to 40 cm (11 to 15 inches) in a well-ventilated area. After use, turn the can upside down to keep the nozzle clog-free, 50°C (122°F).
