Dried lily buds (hemerocallis spp, tiger lily buds or dok mai jeen in Thai, gum jum in Chinese or golden needles) are the dried 2 inch long unopened flowers of the tiger lily. These bright golden yellow buds add a delicate subtle flavor to poultry, soups, stir-fries and are often used in vegetarian dishes for their delicate, musky-sweet flavor.
To prepare soak in warm water 15-20 minutes or until soft. If you are a perfectionist knot each bud to keep it from falling apart in your dish. Cut off and discard tough ends.
Store up to one year well sealed out of direct sunlight.
