Château de Beaucastel 2000
One of the most famous domaines of this appellation. Although a third of the blend is Mouvedre, all permitted 13 varieties are used. Beaucastel was also one of the first domaines to practice organic viticulture and is renowned for its controversial vinification, with grapes being rapidly heated to extract aromas and colour whilst also killing harmful bacteria. After maturation in large oak barrels, the wine is bottled unfiltered.
