Aceto Balsamico Extra Vecchio Malpighi is an extraordinary balsamic vinegar aged in wood barrels of oak, chestnut, cherry, ash and mulberry. This vinegar is aged a minimum of 30 years and then blended with prior harvests. The must, slowly cooked on an open fire in open vessels, is concentrated so as to be reduced to one third of its initial volume. The casks come in a series of decreasing sizes and are then placed in attics to weather the changing of seasons and the passing of time. Produced Tradizionale and bottled under the Consorzio it is given the ultimate sign of approval under strict regulations and age old guidelines.
