A burrito is a great way to eat an incredible variety of fillings wrapped in tasty tortillas.
From beans to meat, poultry and seafood, burritos run the gamut from simple to sublime. Stuffed with your favorite savory meat concoctions or filled with tantalizing vegetarian creations, burritos fill our need for tasty, hearty comfort food that is both easy to prepare and easy to eat. And we have even got dessert burritos for you!
A word tortillas: In today's supermarkets, grocery and specialty stores, a fantastic array of tortillas and wraps are available for adventurous consumers. From basic flour and whole wheat to spinach and chile, the varieties are colorful as well as flavorful.
The variety of tortilla sizes can be quite confusing--one company's burritos-size tortillas may only be as large as another's fijita size tortillas--and extra large by one manufacturer's standards may just match the medium size of another's. The majority of the recipes in Burrito Lovers Cook Book call for large flour tortillas (10-14 inches in diameter).
There is an art to making great burritos. Fill your tortillas too full at your own risk! Too much filling and the tortilla won't fold properly--to little filling and you'll be eating mostly tortilla. Be creative and find out what works best for you!
