The three grades of Maple Syrup that you can choose from are FANCY, that has a very light amber color and very delicate Maple flavor, Grade A Medium Amber, a little darker amber color and slightly stronger maple flavor, and Grade A Dark Amber, a much darker color and much more pronounced maple flavor.
