Michele Perinotti works his rice fields following in the footsteps of five generations of rice growers before him in the region known as Grange Vercellese - the heart of European rice production. Their practices of growing and harvesting are all with an eye to traditional methods. For example, they use old stone polishing equipment to retain as much nutrients in the outermost layer of the rice. Small batch preparation and packaging ensures rice of the highest quality. Each box contains a vacuum sealed package of rice to preserve freshness.Venere Nero which means black venus in Italian and is a cross between the ancient Chinese forbidden rice that was traditionally reserved for the emperor and an Italian variety. This is a wholegrain or integrale rice with a very dark red (almost black) husk that is known for its amazing color and aroma of baked bread. Italians designated the nutrient-rich rice the noblemans rice. This robust rice needs only a pat of butter and a sprinkling of Parmigiano-Reggiano to reach its full flavor potential but the rice is at its best when paired with a white entree such as white fish, scallops or even poached chicken. This rice requires a longer cooking time of about 40 minutes - after which their directions suggest straining the rice after cooking and giving it a quick sautee to absorb the flavors you are preparing. We encourage you to follow the directions - you won't be disappointed. The finished product has an almost purple hue and the rice has a wonderful sweet flavor not found in any other rice we've tried.
